Understanding the Six Tastes and How They Affect Your Body/Mind

According to Ayurveda it is essential to have a balance of the 6 tastes which are sweet, sour, salty, bitter, pungent, and astringent

An imbalance in these tastes can lead to an imbalance of your body. For instance if someone favors the sweet and salty tastes, you can see from the chart below that they may become overweight (as in the case of a lot of Americans these days).

Taste Vata Pitta Kapha Qualities
Sweet Balances Balances Increases Cold, Heavy, Dense, Cloudy, Unctuous, Liquid
Sour Balances Increases Increases Heating, Oily
Salty Balances Increases Increases Heating, Heavy, Pungent, Oily
Bitter Increases Balances Balances Cool, Light, Mobile
Pungent Balances in moderation; Increases in excess Increases Balances Heating, Light, Mobile
Astringent Increases Balances Balances Cool, Drying, Light

For balance, Vata people should prefer sweet, sour, salty and pungent foods, drinks, spices, etc. Avoid the bitter and astringent tastes as they increase the qualities of light and coolness in Vata.

Pitta people should select sweet, bitter and astringent foods, drinks, spices, etc. Avoid sour, pungent and salty foods as they increase the heat and oily qualities.

For balance, Kapha people should choose bitter, pungent and astringent foods, drinks, spices, etc. Avoid the sweet, sour and salty tastes as these tastes increase the heavy, dense, oily, and watery qualities in the body/ mind.
